Mike Tan grew up eating egg waffles with his parents. They’d see a street cart and make a special stop just to enjoy these pull-apart treats.

“It’s a product that brings you back to childhood. Asian American kids love egg waffles. It’s kind of like a hot dog cart for kids in Hong Kong. They’re everywhere,” he told us.

Eggloo has wowed customers with its delicious Asian-inspired street food.

Egg waffle carts are a staple in Chinese neighborhoods around the world, perhaps most notably in Hong Kong. This variety of waffle includes custard powder, evaporated milk, and tapioca starch — ingredients not typically found in an American grocery store.

Mike said he decided to co-found Eggloo because he wanted to recreate happy childhood memories and bring the egg waffle to an American audience. In 2014, Eggloo opened its first location in New York City’s Chinatown.

The novelty dessert shop has gotten a lot of attention for its traditional egg waffles, and diners also love the egg waffle sundaes.

Eggloo makes sundaes that look impressive and taste wonderful. The sheets of egg waffles are rolled into a cone, filled with ice cream, and sprinkled with candy and fruit toppings. Maybe even some sugary cereal.

Eggloo has gained a huge following of both tourists and locals. “We get a lot of tourists, and people who come in for their first dates,” Mike said.

Mike said he remembers one time a digital artist posted an Instagram story about her first date at Eggloo. She met a guy on Tinder and took him to Eggloo for a fun, casual, and indulgent experience.

“She went on the date and eventually married the guy!” Mike said with a laugh.

Mixes and Products Make the Cooking Process Easy

Eggloo’s New York City shop gained a reputation for satisfying cravings for authentic Asian street food, but it has been over a year since a customer has been able to visit. The shop was forced to temporarily close during the COVID-19 pandemic. Mike said he hopes to reopen in summer 2021.

Since the shop has been closed, Eggloo focused on building an online store. It sells egg waffle mixes that couples can use to cook together in at-home date experiences. Eggloo lovers can order Classic, Matcha, and Chocolate Eggloo pancake and waffle mixes along with the tools necessary to make the classic bubble waffle sheets.

Eggloo is different from a standard waffle mix because of the unique flavors and textures it produces. It can be cooked in a regular waffle maker or as a pancake, but Eggloo recommends using the specialized egg waffle plan included in the at-home kit.

“Our egg waffles are different in that they’re little bubble cakes. They’re meant to be ripped. They’re soft on the inside and crunchy on the outside. We also make different flavors than your standard waffle or pancakes,” Mike told us.

The Egg Waffle Home Kit equips couples with everything they need to recreate the Eggloo dining experience at home. That can make for a fun dating adventure, especially if you’re a fan of breakfast for dinner.

The home-kit includes three varieties of waffle mix, a whisk, and Eggloo holders as well as the egg waffle pan. Couples will need to supply their own ice cream and toppings if they want to make an egg waffle sundae.

“The kits have been popular. A lot of people have been getting them as gifts. We saw them during Valentine’s Day as a gift for their significant other, and even baking with them,” Mike said.

Building a Community of Egg Waffle Lovers

Thanks to its eye-catching desserts, Eggloo has collected a lot of likes and shares on social media over the years. The Eggloo Instagram page has nearly 40,000 followers. Over the last year, customers have made a lot of colorful and flavorful creations at home and added their own sweet note to Eggloo’s story.

One Instagrammer shared a stack of Eggloo waffles made in the signature bubble pan that turns the mixture into sheets of small, domed bubbles. The multicolored sheets are stacked on each other and topped with a scoop of ice cream, blueberries, strawberries, and a waffle cone.

Egg waffles are a versatile dish that couples can make their own by adding creative toppings.

A home chef with the handle @FeedYourGirlfriend put an Eggloo twist on the classic Southern dish of chicken and waffles. Someone else finished off the green tea Eggloo mix with generous drizzles of chocolate syrup and a dollop of whipped cream.

Whether they’re topping egg waffles with syrup, bacon, eggs, or fried chicken, food lovers on social media have gotten a lot of attention by making beautiful Eggloo-inspired treats at home.

Eggloo tantalizes the taste buds with its unique flavors, and the team often comes up with limited-edition flavors to get attention. Right now the online store is featuring Thai coconut pumpkin spice. Before that, pizza egg waffles were on the menu.

“It’s an interactive date,” Mike said. “Anybody who grew up eating at egg waffle carts has fond memories of it and to be able to experience cooking and eating waffles with your partner during COVID-19 is a lot of fun.”

The COVID-19 pandemic was a turning point for Eggloo. Mike said he never expected to pivot to at-home mixes, but it has been a rousing success and something he plans to expand. The team is currently working hard to roll out new flavors — black sesame and lyncee rose are next on their list — while preparing the Chinatown location to reopen in spring 2021.

“When we reopen, we’ll expand our product line by working with a bunch of other Asian American food entrepreneurs,” Mike said.

In the past, such partnerships have inspired fun Eggloo sundaes with character decorations, including a miniature Pikachu cookie and an Abominable Snowman chocolate footprint.

Bolstered by the popularity of the Eggloo shop and at-home mixes, Mike said he is glad that he’s been able to share a meaningful experience from his childhood with so many people in New York City and beyond.

“It’s cool to think that something I had as a kid can come to life again,” Mike told us. “So many people had the same experience growing up, and I love that I can help them experience those memories again.”
