The Scoop: Sterling Caviar has set the gold standard in sustainable white sturgeon farming and caviar harvesting in Northern California. Its broodstock dates back to 1983 when a team of fish biologists started aqua farms geared toward sturgeon caviar production. Today, Sterling Caviar has caviar samplers and gift sets that can elevate any occasion, and it can offer the perfect treat for sharing on an intimate date night.
Many couples enjoy dressing up and getting fancy to celebrate a special occasion or date night. An upscale restaurant can offer a lot of remarkable culinary creations and a white-tablecloth atmosphere — but it can also be crowded, pricey, and difficult to get a reservation.
That’s why our experts recommend couples try arranging a fancy date night at home where they can create more intimacy, save some money, and savor their meal for as long as they like. In the wake of the coronavirus pandemic, many restaurants have added delivery and takeout services to make at-home dates extra special. Plus, couples can go online to find upscale ingredients to further enhance the flavors.
Sterling Caviar has developed sustainable farming practices to produce caviar.
Sterling Caviar offers a wonderful treat for daters looking for a memorable culinary experience.
“Having a fancy date night at home is the best way to experience caviar,” the team told us. “Although you can add caviar to almost anything, the best way to experience it is right out of the tin using a Mother-of-Pearl spoon, or doing a caviar bump by placing a dollop of caviar on your hand.”
In 1983, Sterling Caviar became the first commercial sturgeon farming operation in California. The company originally sourced its white sturgeon from the Sacramento River, but in 1994, the team worked with the California Department of Fish and Wildlife and the University of California, Davis to develop an environmentally responsible broodstock program and replaced all the wild fish it borrowed from the river.
Today, Sterling Caviar maintains an online store that introduces customers to top-quality caviar. Its rich flavors, ethical farming, and friendly service have impressed people across the U.S. If you’re planning a date night at home, you can’t go wrong by adding Sterling Caviar to the menu.
“We are so proud to be the pioneer of culturing sustainability of the California white sturgeon,” the team said. “All the white sturgeon fish we have at Sterling Caviar have been raised on our farm!”
Sterling Caviar is based in Sacrament, also known as the Farm-to-Fork Capital of America. The company has four farms within the area where American White Sturgeon are spawned and raised with meticulous care. The team puts in the time to ensure absolute quality and transparency. The sturgeon take seven to 10 years to reach full maturity, and only then can the harvest begin.
“The caviar is packed fresh on our farm and sent by overnight delivery to your doorstep. You can’t get any fresher than that,” the team said. “And because we take great pride in what we produce, customers can always expect quality products arriving at their door.”
Sterling Caviar’s farm-to-palate system eliminates the middleman. The company maintains a good reputation in the culinary community because of its high-integrity and high-quality approach to caviar production. The team does not cut corners or settle for second-rate.
Thanks to its hands-on farming practices, Sterling Caviar can stand behind the quality of every spoonful of its caviar. The fish biologists can trace each product back to an individual sturgeon and tell customers which tanks it swam in, what it was fed, when it was hatched, and who its parents were. That transparency is unmatched in the industry.
Sterling Caviar is committed to transparency and sustainability in its farming practices.
Sterling Caviar has a robust collection of caviar-inspired recipes to give at-home chefs ideas for their next date night or dinner party. From breakfast crêpes to savory cheesecakes, this recipe guide has a lot of elevated dishes that can tantalize the taste buds.
In October 2020, Sterling Caviar was acquired by its new owner Eugene Fernandez. Now under new management, the company is looking ahead to many improvements and growth opportunities for the Sterling brand.
“Due to the nature of the business, we end up with a lot of fish wastes that can be turned into fertilizer, fish skin that could be turned into leather, and caviar extract that can be used for skin care,” the team’s spokesperson explained. “The potential is there and the possibilities are very real. The next few years are definitely going to be an exciting time for the company.”
A passionate and knowledgeable team works behind at the scenes at Sterling Caviar. The company has a good mix of industry veterans and newcomers who share an appreciation for the savory taste of good caviar. The company has stayed in business for over 30 years by blending tradition with innovation and providing compassionate customer service every step of the way.
Sterling Caviar sells its caviar to distributors, retailers, and restaurants, but it also has a direct-to-consumer store where it offers a doorstep delivery service. Customers purchase these products with high expectations — and the team goes to great lengths to see them satisfied.

General Manager Myra Tallerico told us a story about a Sterling Caviar customer who emailed with a complaint about a caviar tin opener’s high delivery fee. “You could put it in an envelope and mail it for 50 cents,” he wrote in a lengthy tirade. “In what world does this make sense?”
Myra had recently started at Sterling Caviar, but she was already a firm believer in the mantra that the customer is always right. She wrote back agreeing that the price was too high and offering to send him a free caviar tin opener.
“Thank you for bringing this glitch to my attention,” she wrote. “And if you have any further questions or comments, please feel free to reach out to me directly.”
The gentleman did reach back out, but with a much friendlier tone this time. “I do apologize. I snapped, and you were the guiltless recipient,” the customer said. “Thank you too for your kind offer to send me an opener. That is quite unnecessary, though I do appreciate your sentiment. Good luck in your new job. I wish you great success. Based on the masterful way you handled my boorish behavior, I suspect you will be quite successful.”
The story doesn’t quite end there, however. About a month later, Myra was on a Zoom call with the COO of a client on the East Coast. That woman later told her husband about the meeting, and he said that he’d actually met Myra through email when he’d spoken out against high shipping charges. The COO told Myra about the coincidence, and Myra took the opportunity, now that she had an address, to send the gentleman a free tin opener after all.
“I believe wholeheartedly that we should extend kindness always and provide stellar customer service to everyone we interact with,” Myra told us. “This is what we want for Sterling Caviar to be about. It’s not just about our products, but it’s also about how we treat and care for our customers.”
Sterling Caviar has been farming sturgeon and producing caviar for decades. The team’s wealth of caviar knowledge can be an asset for people hoping to impress a date and make special memories over dinner.
Staying home has become the new going out for daters across the U.S., but that doesn’t have to mean putting a halt to fine dining. Foodies can order from Sterling Caviar to give themselves a savory taste of the sea and bring elevated flavors to their dinner table.
Sterling Caviar has already established itself as a leader in sustainable white sturgeon farming, and the team is continually exploring ways to give back to the environment and the community.
“We are focused on growing the brand, tweaking our operations so that there’s much more efficiency in our processes, and definitely elevating the customer experience,” the team told us. “We have high standards, we’ve set high expectations for ourselves, and we’ll remain true to our staff and our customers.”
